{"id":19883,"date":"2022-07-22T07:04:31","date_gmt":"2022-07-22T07:04:31","guid":{"rendered":"https:\/\/mdr.foobrdigital.com\/?p=5709"},"modified":"2022-07-22T07:04:31","modified_gmt":"2022-07-22T07:04:31","slug":"low-carb-lemon-blueberry-bread","status":"publish","type":"post","link":"https:\/\/mudassirbackup.infinitycodestudio.com\/index.php\/2022\/07\/22\/low-carb-lemon-blueberry-bread\/","title":{"rendered":"Low carb lemon Blueberry bread"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\"><strong>INGREDIENTS<\/strong> <\/h2>\n\n\n\n<p><\/p>\n\n\n\n<ul><li>2.5 cups\u00a0almond flour (Bob\u2019s Red Mill)<\/li><li>2\/3 cup\u00a0Swerve Confectioner Sweetener<\/li><li>zest of\u00a01\u00a0lemon<\/li><li>1 teaspoon\u00a0baking powder (Hain brand\u00a0is grain-free)<\/li><li>1\/2 teaspoon\u00a0baking soda<\/li><li>2\u00a0eggs<\/li><li>1\/2 cup\u00a0+ 1 tbsp milk (or coconut milk)<\/li><li>1\/4 cup\u00a0olive oil (or oil of choice)<\/li><li>2.5 tablespoons\u00a0lemon juice<\/li><li>1 tablespoon\u00a0apple cider vinegar<\/li><li>2 teaspoons\u00a0vanilla extract<\/li><li>1 cup\u00a0fresh blueberries<\/li><\/ul>\n\n\n\n<p><\/p>\n\n\n\n<p><strong>Glaze<\/strong>&nbsp;(optional)<\/p>\n\n\n\n<ul><li>1\/2\u00a0of an eight oz container cream cheese, room temperature (Kite Hill\u00a0for dairy-free)<\/li><li>1 tablespoon\u00a0butter, softened (Earth Balance Spread for dairy-free)<\/li><li>1\/3 cup\u00a0Swerve Confectioner Sweetener<\/li><li>1 tablespoon\u00a0lemon juice<\/li><li>lemon zest (optional)<\/li><li>1\/8 teaspoon\u00a0salt (optional)<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">INSTRUCTIONS<\/h3>\n\n\n\n<ol><li>Preheat oven to 350 degrees<\/li><li>In a large bowl, whisk together almond flour, Swerve, baking powder + baking soda. Add lemon zest overtop and whisk together again until evenly combined.<\/li><li>Add your eggs, milk, olive oil, lemon juice, apple cider vinegar, vanilla and blend together with whisk until combined well and batter is smooth.<\/li><li>Pour 1\/2 the batter into a parchment paper lined 1 pound loaf pan, then add about half of your blueberries. Pour the rest of the batter in and gently push your remaining blueberries into the batter. We love baking this loaf in this\u00a0USA pan.\u00a0<strong>Making sure your oven is preheated, bake at 350 degrees for 55-65 minutes. At 30 minutes in, cover completely with aluminum foil-this will steam the bread, allowing it to cook the rest of the way through while staying nice and moist! Keep in mind, oven times can occasionally vary, peek in at 55 minutes, if it is not cooked through, check back in at 65 minutes. And make sure to use oven mitts when securing the foil, that loaf pan will be hot!<\/strong><\/li><li>Remove from oven and let COOL COMPLETELY before removing from pan and glazing. (If you\u2019re in a rush, let it cool 10 minutes outside of the oven and then transfer the loaf pan to the freezer for about 25 minutes).<\/li><li>While you\u2019re waiting for the bread to cool, go ahead and mix together your glaze. With a hand mixer, blend together your cream cheese and butter.<\/li><li>Add lemon and blend again. Finally, add in Swerve and salt, then blend one last time. Chilling the glaze will thicken it. You can also add more Swerve for a thicker texture or more lemon juice to thin it out.<\/li><li>Spread glaze over bread and serve. You can also place it in the fridge to chill, it\u2019s excellent served cold.<\/li><li>Enjoy! Store any leftovers in an airtight container and place in refrigerator.<\/li><li>*These can also be made as muffins, keep in mind baking time will decrease to about 20-25 min. You can gently rotate the muffin tin 180 degrees at about 12 minutes in and just loosely place a piece of foil overtop and continue baking for another 8-12 minutes.
